Teff Banana Date bread/muffins

¾ cup pitted dates
2 1/4 cups water
1 1/2 ripe-ish bananas – more than 1 but not 2 large ones
1 cup teff flour
3 Tablespoons cinnamon
2 Tablespoons baking powder
2 teaspoon baking soda
½ to 2/3 cup walnuts chunked or crumbled
Simmer dates in water until soft – 16 to 30 minutes. Let
cool
Put dates, water and banana in blender and blend until
smooth
Add 1 C. teff and cinnamon and blend
Stir in baking soda and baking powder
Adjust the mixture until it’s a thick, barely pourable
batter. You have total control at this point by adding more teff 1/3 cup at a
time.
Stir in walnut crumbles with a spatula so as to not
crush up walnuts
For muffins shovel batter into & bake in papered
cups for 27 minutes at 335 – preheated
OR
Pour batter about 1 1/2” thick into pans of your choice like
CorningWare (plopping the batter right onto baking parchment)
Bake at 345 for about 55 minutes - maybe less.
Baker’s notes:
I’m using deglet nour dates which aren’t that sweet and are fibrous.
Both these qualities are advantages.
I sometimes add 2 teaspoons allspice if I have it around
Don’t crush up the walnuts too much - careful
I have no idea what the baking soda does in here – I just
copied a bunch of recipes for banana bread and most of them had it in
The longer this sits around, in my place at room
temperature, the better it is although a day and a half is as long as any has
lasted. It gets better.
My latest strategy for baking of all kinds is to use
parchment paper. So, I take this batter and pour it into Corning Ware about 6”
x 6” lined with a large square of paper. If you use multiple dishes make sure
the batter depth is the same as that governs the cooking time. Just use a
toothpick to know when it’s done. The Corning Ware is particularly easy as I
just put the cover on when it’s cooled.
If you’re worried about weight gain:
1.
Have you ever seen a fat Ethiopian? Teff is the
national flour of Ethiopia and Somalia also to some degree.
2.
Compensate by knocking off ALL dairy. It’s cow
mucus designed for BABY cows.
3.
Don’t eat any seeds or nuts except walnuts 4-5 a
day.
4.
NO avocados, no oil at all.
5.
Do what NA people do if they have to take a
troublesome prescription med – leave it at a sponsor’s or neighbor’s house and
get a daily allotment and no more.
